Recipe of the chef
Do you like cooking and do you want to make one of the chef's recipes? See the recipe of the month and create your own dessert. From now on each month the chefs of Hotel Casa 400 will prepare a course of the summer menu. This month our sous-chef Timo Bokhorst prepared a delicious panna cotta. A panna cotta is an Italian classic, and simple to make at home with this easy recipe. Panna cotta literally means cooked cream. It originally comes from the Nord-Italian region Piëmont. The panna cotta should be served cold.

Cuttingboard
Knife
Mixer
Measurering jug
Small glasses for the panna cotta
Ingredients for panna cotta:
3dl milk
3dl cream
1 vanille-pod
4 leafs of gelatin
120 grams of sugar
Red fruit:
½ cup of strawberries
½ cup of and raspberries
½ cup of and blackberries
I bottle of crème de cassis
Powdered sugar
Vanilla-pod
Mint-leafs
Method of preparations:
1. Put the milk (suger and cream) on low fire and stir it regularly.
2. Cut the vanilla by half and add this to the milk
3. Soak the gelatin leaf’s in cold water and wait until the leafs are soft.
4. Bring the milk/sugar/vanilla mixture to boil and take it from the fire.
5. Squeeze the gelatin leafs out and mix this with the milk mixture. Cool down this mixture in a bowl with cold ice water.
6. Wash the strawberries and raspberries and blackberries and cut these in small pieces.
7. Mix the fruit in a bowl.
8. Sprinkle it with a bit of crème de cassis.
9. Add the powdered sugar.
10. Cut a small piece of the mint and add this.
11. Pour the cooled down milk mixture in the measuring jug and fill the glasses.
12. Place the glasses in the fridge and wait for 120 minutes till it stiffens up.
13. When serving, add a bit of the marinated red fruit and serve it with vanilla or yoghurt ice.
